Ingredients:

1 lb thinly sliced beef steak (bistec)

1 lb tomatillos, husked and rinsed

2-3 jalapeño or serrano peppers (adjust for heat)

1/2 onion, chopped

2 garlic cloves, minced

1/2 cup fresh cilantro, chopped

1/2 cup chicken broth

1 tbsp vegetable oil

Salt and pepper to taste

Fresh lime wedges for serving

Directions:

Prepare the Salsa Verde:
In a medium saucepan, add the tomatillos and peppers. Cover with water and bring to a boil. Cook for about 5-7 minutes until the tomatillos are soft. Drain the water and transfer the tomatillos and peppers to a blender. Add the chopped onion, garlic, cilantro, and chicken broth. Blend until smooth and set aside.

Cook the Beef:
Heat the vegetable oil in a large skillet over medium heat. Season the bistec with salt and pepper. Add the beef slices to the skillet and cook until browned, about 3-4 minutes per side. Remove from the skillet and set aside.

Simmer in Salsa Verde:
In the same skillet, pour in the blended salsa verde. Bring it to a simmer and cook for about 5 minutes, stirring occasionally. Add the cooked bistec back into the skillet, coating it with the salsa. Simmer for another 10 minutes, allowing the flavors to meld.

Serve:
Serve the Bistec en Salsa Verde with warm tortillas, rice, and beans. Garnish with fresh lime wedges for a zesty touch.
