The Classic Señorita Bread or Spanish Bread
Señorita bread or spanish bread or pan de kastila is a Filipino bread with sweet filling made of bread crumbs, brown sugar and butter. How to make a super yummy version, come bake along with me.
Here’s what you’ll need:
FILLING:
1/3 cup butter (75g)
1/2 cup brown sugar (100g)
2 tbsp milk (30ml)
1/2 cup bread crumbs (50g)
1/4 cup plain flour (30g)
pinch of salt
DOUGH:
1 tsp instant yeast (3g)
1/2 cup milk (125ml)
1 tbsp milk powder (8g)
2 tbsp sugar (30g)
1 large egg
2 cups bread flour (250g)
1/2 tsp salt (2g)
2 tbsp unsalted butter (25g)
Breadcrumbs for dredging
Instructions:
1. Let’s make the filling, in a bowl mix together softened butter and brown sugar until smooth.
2. Add milk and mix.
3. Add bread crumbs, flour and salt. Mix until incorporated. Set aside.
4. In a mixing bowl, mix yeast, milk, sugar, powdered milk and egg.
5. Add bread flour, and salt. Mix until dough forms.
6. Add butter and mix until fully absorbed.
7. Slap and fold until dough is smooth, about 5 minutes.
8. Grease bowl and place dough, cover for 1 hour or until doubled in size.
8. Punch air out. Divide into 10 equal pieces.
9. Smooth into a ball and bench rest for 10-15 minutes.
10. Flatten dough ball and place filling. Pinch edges to seal.
11. Roll into a log.
12. Dredge in bread crumbs.
13. Place in a 9×13 inches baking pan.
14. Cover for 20 minutes, preheat oven at 170C or 340F.
15. Bake for 20-25 minutes or until light golden.
