Tacos Gobernador (shrimp and cheese tacos)
Ingredients:
– 2 lbs. of Shrimp
– 3 Chiles Poblanos
– 1/2 Red Onion
– 3 Minced Garlic Cloves
– 2 Chiles Serranos
– 2 Roma Tomatoes
– Chopped Cilantro
– 1 Tbsp. of Old Bay Seasoning
– 1/2 Tsp. of Paprika
– 1 Tsp. of Garlic Powder
– 1 Tbsp. of Vegetable Oil
– 2 Tbsp. of Butter
Directions:
Char Chiles Poblanos on all sides then put them in a bag to “sweat” for 5-7 minutes. Carefully peel the skin and cut into small cubes.
Meanwhile, peel and devein shrimp. Cut shrimp into small pieces. Then, add it to a bowl along with the old bay seasoning, paprika and garlic powder.
Heat up a pan over medium heat. Add oil then add butter. Sauté onion, garlic and serranos for 2 minutes. Then, add the chiles poblanos and tomatoes and sauté for another 2 minutes.
Carefully add the shrimp and cook for 3 minutes. Shrimp cooks extremely fast!!! Turn heat off and add a little chopped cilantro to your liking.
Fry your tortilla on both sides on the comal then add some Queso Chihuahua. Once melted, add the shrimp and close it up like a taco. Fry until your desired crunchiness.
