Refreshing Lime Mousse Cheesecake

Ingredients:
Crust:
1Β½ cups graham cracker crumbs
ΒΌ cup melted butter
ΒΌ cup sugar
Filling:
8 oz cream cheese (softened)
1 cup heavy whipping cream
Β½ cup sugar
ΒΌ cup fresh lime juice
Zest of 1 lime
1 tsp vanilla extract
Instructions:
Crust: Combine graham cracker crumbs, melted butter, and sugar. Press into a springform pan to form a firm crust.
Filling: Beat cream cheese until smooth. Mix in sugar, lime juice, lime zest, and vanilla extract until creamy.
Whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
Pour the mixture over the crust and chill in the fridge for at least 4 hours or until set.
Garnish with lime slices or zest for a zesty touch!
