Tacos de Carne Asada ( street food )

Ingredients:

For the Carne Asada:

1 lb (450g) skirt steak or flank steak

3 garlic cloves, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon salt

1/2 teaspoon black pepper

Juice of 1-2 limes

2 tablespoons olive oil

1/4 cup chopped fresh cilantro (optional)

For the Tacos:

8-10 small corn tortillas

1 small white onion, finely chopped

1/2 cup fresh cilantro, chopped

2 limes, cut into wedges

Salsa of your choice (such as salsa verde or pico de gallo)

Salt to taste

Directions:

1. Marinate the Steak:

In a small bowl, combine garlic, chili powder, cumin, salt, black pepper, lime juice, olive oil, and cilantro (if using) to make the marinade.

Place the steak in a resealable bag or shallow dish and pour the marinade over it. Ensure the steak is well coated. Marinate for at least 1 hour, or preferably overnight in the refrigerator.

2. Prepare the Toppings:

Chop the onion and cilantro and set aside. These will be used to garnish the tacos.

3. Grill the Steak:

Preheat your grill, grill pan, or skillet over high heat. You want the pan to be very hot to get a good sear on the steak.

Remove the steak from the marinade, letting excess drip off. Grill the steak for about 3-5 minutes per side, depending on the thickness, until it reaches your preferred doneness.

Let the steak rest for about 5 minutes before slicing. This helps retain the juices.

4. Warm the Tortillas:

While the steak is resting, warm the corn tortillas on the grill or in a dry skillet over medium-high heat. Keep them warm by wrapping them in a clean kitchen towel or a tortilla warmer.

5. Assemble the Tacos:

Thinly slice or chop the steak against the grain.

Place an even amount of carne asada on each tortilla.

Top with the chopped onion and cilantro.

Serve each taco with a wedge of lime and salsa on the side.

6. Serve:

Encourage everyone to squeeze lime juice over their tacos and add salsa as desired.

Salt the tacos to taste just before eating for an extra flavor boost.
