How to make dinner rolls that stays soft for days. Just add mashed potato and you can make a supersoft dinner rolls.
Here’s what you’ll need:
3/4 cup milk (187ml)
1 cup mashed potato (210g)
1 egg
1/4 cup sugar (50g)
2 tsp instant yeast (6g)
4 cups bread flour or all purpose flour (500g)
1 tsp salt
1/3 cup unsalted butter (75g)
Instructions:
1. In a bowl, combine milk, mashed potato, egg, sugar and yeast. Mix well.
2. Add flour and salt. Mix until incorporated.
3. Add butter, mix until butter is fully absorbed.
4. Knead, slap and fold until smooth and elastic.
5. Place in a greased bowl.
6. Cover and proof for for 45-55 minutes or until doubled in size.
7. Punch the air out.
8. Transfer to a floured counter.
9. Divide into 8 equal pieces, around 60 grams each dough ball.
10. Place in a greased 12 x 8 inches baking dish or pan.
11. Cover for 20 minutes.
12. Preheat oven at 180C/350F for conventional oven or 170C/340F for convection oven.
13. Brush with eggwash.
14. Bake for 25 minutes or until lightly browned.
15. Brush with melted salted butter while rolls are still hot.
16. Serve and enjoy.
