Here’s what you’ll need:
3 pieces overripe bananas (290g)
2 eggs
3/4 cup sugar (150g)
3/4 cup oil (180ml)
1/3 cup milk (80ml)
3 tbsp plain yogurt (45g)
1 tsp vanilla extract (5ml)
1/2 tsp salt (3g)
1 and 1/2 cup all purpose flour (190g)
1 tsp baking powder (5g)
1 tsp baking soda (5g)
Instructions:
1Preheat oven at 170ºC(340ºF). Mash 3 overripe bananas, set aside. Beat together eggs, sugar and oil until light and fluffy.
2Add milk, yogurt, vanilla and salt. Mix well.
3Sift in flour all purpose flour, baking powder and salt. Mix until no lamp is visible. Do not over mix.
4Add mashed bananas. Mix just until combined.
5Grease an 8 inch pan and line with parchment paper. Place batter in the pan.
6Bake in a preheated oven for 35 to 40 minutes or until toothpick comes out clean when inserted.
7Let it cool down for a while. Transfer to a serving plate.
