No Bake Creamy MANGO Cheesecake
How to make a No Bake Creamy Mango Cheesecake.

Here’s what you’ll need:
CRUST:
1 and 1/2 cup crushed graham crackers
1/4 cup brown sugar (50g)
1/2 cup melted butter 120ml (salted)
FILLING:
3 tbsp unflavored gelatin
1/3 cup cold water
3 packages (8 oz each) cream cheese
1 cup sugar (200g)
2 cups mango puree
2 tsp vanilla (10ml)
2 tbsp fresh lemon juice (30ml)
1 cup heavy cream or whipping cream
Mango Glaze:
1 cup mango puree
1/4 cup sugar
1 tsp gelatin powder

Instructions:

1. Blend sweet ripe fresh mangoes to produce three cups of mango purée. Set aside.

2. CRUST: In a mixing bowl, combine graham crackers, sugar and melted butter. Mix until well combined

3. Press the mixture evenly to an 8×3″ or 9×3″ loose base tin or spring form pan. Refrigerate while preparing the filling.

4. FILLING: In a small bowl, mix gelatin powder and water. Let it sit for 5 minutes to bloom. Pour boiling hot water in a separate bowl then place bloomed gelatin as shown in the video. Stir until gelatin is melted. Set aside.

5. In a bowl, beat softened cream cheese until creamy then add sugar and beat until smooth and creamy.

6. Add mango puree, vanilla and lemon juice. Mix well. Scraping sides and bottom.

7. Whip cream until thick then fold onto the cake mixture until incorporated.

8. Gently add cooled gelatin mixture and mix.

9. Pour batter in the prepared pan.

10. Run a skewer or chopstick to eliminate small bubbles.

11. Cover and refrigerate at least 4 hours or until set (preferably overnight).

12. GLAZE: In a sauce pan mix together mango puree, sugar and gelatin powder. Let it sit for 5 minutes for the gelatin to bloom. Then cook until gelatin and sugar is dissolved.

13. Transfer to a bowl and let it cool down completely.

14. Take out the chilled cheesecake from the refrigerator then wrap the pan with towel that is soaked in hot water.

15. Push up cake as shown.

16. Place cake in a serving plate.

17. Top with glaze and fresh cubed mangoes then drizzle some glaze in top of everything.

18. Serve and enjoy!
