Thai Coconut Red Curry Soup With Shrimp

Ingredients:

In butter and oil, I sautéed:

Half a white onion, sliced

Half a red pepper, sliced

A can of water chestnuts, sliced

3 cloves garlic, minced

2 tablespoons of red curry paste

Then:

Add ginger (I had ground dried, 1 tablespoon)

Add Thai chicken broth (campbells), or if you can’t get that you can use chicken broth and add lemongrass.

Add basil leaves (I had dried basil but fresh Thai basil is best!)

Add veggies of choice (I used broccoli, peas, and celery)

And 1 tables spoon of soy sauce

1 tablespoon of brown sugar.

Bring to a light boil and simmer for 20 min on medium low

I cooked rice in a separate pot in chicken broth so it didn’t suck up all my tasty broth.

You can use rice or rice noodles.

I turned off the heat for the curry broth and added shrimp and a can of coconut milk. Stir really well.

Served mine in a bowl and added a scoop of rice on top. Garnish with sliced green onion and red pepper flakes.

Enjoy!! I just used what I had on hand.

Additions of lemongrass, fresh Thai basil, fish sauce, and sour shrimp paste will make it even better, but I had none on hand.
