How to make a fluffy cloud-like Cream Cheese wool roll

Here’s what you’ll need:
1/2 cup milk (125ml)
1 large egg
2 tablespoon sugar (30g)
1 teaspoon instant yeast (3g)
2 cups all purpose flour or bread flour (250g)
1/2 tsp salt (3g)
2 tbsp unsalted butter (25g)
FILLING:
3/4 cup cream cheese (160g)
1 tbsp sugar (15g)
1/2 tsp lemon juice (3ml)
1/2 tsp vanilla (3ml)

Instructions:

1. In a bowl, mix together milk, egg, sugar and yeast.
2. Add flour and salt. Mix until dough forms.
3. Add unsalted butter, mix until butter is fully absorbed.
4. Slap and fold until dough is smooth, around 5 minutes.
5. Cover for 1 hour or until doubled in size. Set aside.
6. Meanwhile, let’s make the filling.
7. Cream together cream cheese and sugar until smooth.
8. Add lemon juice and vanilla and mix. Set aside.
9. Place proofed dough on a lighly floured counter and divide into 8.
10. Smooth into a ball and bench rest for 10 minutes.
11. Place some filling using piping bag.
12. Roll out dough ball and make some cuts as shown in the video.
13. Roll tightly.
14. Place in a 9×13″ baking pan lined with parchment paper.
15. Cover while preheating the oven at 170C/340F for 15-20 minutes.
16. Bake for 18-20 minutes.
17. Brush with butter.
