Khachapuri-traditional Georgian bread
Khachapuri is a traditional Georgian dish of cheese-filled bread. The bread is leavened and allowed to rise, molded into various shapes, and then filled in the center with a mixture of cheese or other ingredients.
How to make Tasty and Delicious Georgian Bread.
Here’s what you’ll need:
2 and ¾ cup bread flour (340g)
1 and 1/2 tsp instant yeast (4g)
2 tbsp sugar (30g)
¾ tsp salt (4g)
1 cup milk (250ml)
2 tbsp olive oil (30ml).
Shredded mozzarella and monterey jack for filling and topping
You can top with egg too
Instructions:
1. In a standmixer mixing bowl, mix together flour, sugar, yeast and salt then add milk.
2. Place mixing bowl on a stand mixer, attach dough hook and set at speed 2 for 2 minutes then add olive oil. Knead for 2 to 4 minutes or until dough is smooth. Form into a ball and place in an oiled bowl. Cover for 1 hour or until doubled in size.
3. Punch the air out. Transfer to a counter. Divide into six equal pieces. Roll into a ball. Cover and bench rest for 15 minutes.
4. Roll out dough into round shape, about 7 inches in diameter. Place some shredded cheese around the edge. Tuck it in. Twist edge. See video for reference. Preheat oven at 190C/380F for 15 minutes.
5. Place on a lined baking sheet pan. Top with more cheese and dried or fresh parsley. Brush sides with milk. No need to proof.
6. Bake for 15 to 17 minutes or until light golden.
