Very Moist Mini Banana Loaf

How to make the best Banana Loaf. Hello darling bakers, today let’s make this very moist Mini Banana Loaf.

Here’s what you’ll need:
2 large eggs
3/4 cup brown sugar (150g)
1/2 cup oil (120ml)
1 and 1/2 cup mashed bananas
1/4 cup greek yogurt or plain yogurt (60g)
1 tsp vanilla extract (5ml)
1 and ¾ cup all purpose flour (220g)
1/2 tsp salt (3g)
1 tsp baking soda (4g)
1/2 tsp baking powder (2g)
1/2 tsp cinnamon (2g)
Some chocolate chips and chopped walnuts or pecans for toppings.

Instructions:

1. Preheat oven at 165C/330F. Mash bananas then set aside.

2. Beat eggs and brown sugar until light and airy, about 3 minutes. Then add oil and beat until incorporated.

3. Add mashed bananas, yogurt and vanilla. Mix well.

4. Sift in all purpose flour, baking soda, baking powder, salt and cinnamon powder. Gently fold until no streaks of flour.

5. Grease mini loaf oan with butter or oil. Scoop batter and place in the pan. Top with your fave toppings.

6. Bake in a preheated oven for 20-25 minutes or until toothpick comes out clean when inserted.\

7. Let it cool on a wire rack.

8. Serve and enjoy!
