SUPER MOIST APPLE CAKE

How to make a super easy and moist Apple cake.

Here’s what you’ll need:
3 large eggs
1 cup sugar (200g)
1/2 cup plain yogurt (125g)
1/3 cup oil (80ml)
1 tbsp baking powder (10g)
1/2 tsp salt (3g)
1 tsp vanilla extract (5ml)
2 cups all purpose flour (250g)
2 medium sized apples (diced) about 3 cups
1 tsp lemon zest
Toppings: almond slivers and icing sugar

Instructions:

1. Beat sugar and eggs until light and fluffy.

2. Add yogurt and oil, baking powder, salt and vanilla. Mix until well incorporated.

3. Sift flour and mix just until combined.

4. Dice 2 medium apples.

5. Add apples to the batter and lemon zest. And mix.

6. Line an 8 x 3 inches round pan with parchment paper.

7. Place batter.

8. Bake in a preheated oven at 170C/340F for convection oven or 180C/350F for conventional oven. Preheat oven for at least 15 minutes.

9. Let it cool down and transfer to a serving dish.

10. Serve and enjoy!
