The ULTIMATE BANANA Loaf Cake

How to make The Ultimate Banana Cake that is super moist. This banana cake recipe is a keeper.

Here’s what you’ll need:
1 cup (200g) brown sugar (packed)
3/4 cup (170g) melted butter
3 large eggs
1 tsp vanilla (5ml)
2 and ½ cup cake flour (280g) or all purpose flour but use 2 cups only
1 tsp baking soda
1 tsp salt
1 tsp cinnamon powder
1 cup mashed bananas (250g)
3/4 cup plain yogurt (190g)
1 cup chopped pecans (100g)

Instructions:

1. Preheat oven at 170C/350F. Beat together sugar and oil for 2 minutes.

2. Add eggs and vanilla. MIx until combined.

3. Sift in flour, baking soda, salt and cinnamon powder. Mix until combined.

4. Add in mashed bananas and plain yogurt.

5. Add coarsely chopped pecans and mix just until combined. Scrape sides and bottom.

6. Grease a 9 x 5 inches loaf dish and line with parchment paper.

7. Place the batter. Spread evenly.

8. Bake in a preheated oven at 170C/350F for 50-60 minutes or until toothpick comes out clean when inserted.

9. Let it cool down completely.

10. Serve and enjoy!
