GERMAN CHOCOLATE UPSIDE-DOWN CAKE
Ingredients:
1 cup chopped pecans
1 cup coconut
1 package German chocolate cake mix*
3 large eggs
1/3 cup vegetable oil
1/2 cup butter, room temp.
2- 8ounces package cream cheese, room temp.
3 1/2 cups confectioner’s sugar
Directions:
Step 1: Line with parchment paper a 13×9-inch baking pan.
Step 2: Spread the chopped pecans on the bottom of the prepared baking pan.
Step 3: Spread the coconut over the pecans.
Step 4: Place the pan inside the oven and preheat.
Step 5: Remove from the oven and transfer the pecans and coconut in a medium bowl. Let it sit at room temperature to cool.
Step 6: Refer to the instructions provided on the package of the cake mix, then set aside.
Step 7: Place the cream cheese and butter in a microwavable bowl. Place it inside the microwave and heat until melted completely.
Step 8: Remove from the microwave and add in the confectioners’ sugar. Stir until well mixed.
Step 9: Transfer the cake mix over the coconut and pecans.
Step 10: Decorate the batter with the cream cheese mixture. Make large ribbons over the batter by swirling it carefully.
Step 11: Place it inside the oven and bake for 40 to 50 minutes at 350 degrees F or until done.
Step 12: Remove from the oven and let it sit at room temperature to cool for at least 10 minutes.
Step 13: Flip the cake on a platter or baking sheet.
Step 14: Serve and enjoy!
Notes:
You can use vegetable oil instead of coconut oil.
You can also line with parchment paper a large springform pan.
