Triple Chocolate Cheesecake

Ingredients:
Crust:
1½ cups chocolate cookie crumbs
¼ cup sugar
6 tbsp butter (melted)
Cheesecake Filling:
24 oz cream cheese (softened)
1 cup sugar
1 cup sour cream
1 tsp vanilla extract
4 large eggs
8 oz semi-sweet chocolate (melted)
½ cup milk chocolate chips (melted)
½ cup dark chocolate chips (melted)
Chocolate Ganache Topping:
½ cup heavy cream
1 cup semi-sweet chocolate chips
Instructions:
Crust: Preheat oven to 325°F (160°C). Mix chocolate cookie crumbs, sugar, and melted butter. Press into a springform pan. Bake for 10 minutes, then cool.
Filling: Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs (one at a time). Divide the batter into three parts and mix in melted semi-sweet, milk, and dark chocolate into each.
Layer the batters over the crust, starting with dark chocolate, then milk chocolate, and finally semi-sweet chocolate. Bake for 1 hour 10 minutes, then cool completely and refrigerate for 4 hours.
Ganache: Heat heavy cream until warm, pour over chocolate chips, and stir until smooth. Pour over the cheesecake and spread evenly. Let set.
