How to make an easy Chocolate Mousse Doughnuts
Here’s what you’ll need:
Easy Choco Mousse Filling:
1 cup dark choco chips (150)
1 cup hot whipping cream (250ml)
For the dough:
2 egg yolks
3 tbsp sugar (45g)
1 cup milk (250ml)
2 tsp instant yeast (6g)
3 cups all purpose flour (375g)
3 tbsp pure cocoa powder (30g)
1 tsp salt (4g)
3 tbsp unsalted butter (36g)
For choco dusting:
1/3 cup milk powder (35g)
1/3 cup cocoa powder (35g)
1/3 cup sugar (65g)
Instructions:
1. For the filling: Heat whipping cream until before boiling point.
2. Add to a cup of dark chocolate chips. Let it sit for about 3 minutes. Then stir until melted. Cover and let it chill in the fridge for at least 3 hours or overnight.
3. In a bowl, mix together egg yolks, sugar, milk and yeast.
4. Add flour, cocoa powder and salt.
5. Mix until dough is formed.
6. Add unsalted butter and mix until fully absorbed.
7. Knead until dough is smooth.
8. Place in an oiled bowl and cover for 1 hour or until doubled in size.
9. Deflate dough and transfer to a floured counter. Divide into 12 equal parts.
10. Smooth into a ball and place each on a parchment paper. Cover for 20-25 minutes.
11. Deep fry over medium heat.
12. About 70 to 80 seconds each side.
13. Let it cool down a bit then poke a hole on each doughnut for filling.
14. Place filling in a piping bag. Fill each doughnut.
15. For dusting: In a separate bowl, mix powdered milk, pure cocoa powder and sugar.
16. Dredge filled doughnuts on a cocoa dusting mixture.
17. Serve and enjoy!
