How to make Thai Milk Buns soft as a cloud.

Here’s what you’ll need:
CUSTARD CREAM:
3 egg yolks
1/2 cup condensed milk (150g)
1 cup milk (250ml)
1/4 tsp salt (1g)
1 tbsp cornstarch (8g)
2 tbsp unsalted butter
1 cup whipping cream (250ml)
a pinch of salt

DOUGH:
1 cup milk (250ml)
1 large egg
1/3 cup condensed milk
1/2 tsp vanilla (2.5ml)
2 tsp instant yeast (6g)
3 and 1/2 cup bread flour (440g) or all purpose flour
1/4 cup powdered milk (25g)
1 tsp salt (4g)
1/4 cup unsalted butter (55g)

DRY TOPPING:
3 tbsp icing sugar (18g)
3 tbsp powdered milk (18g)

Instructions:

1. In a sauce pan, cook egg yolks, sweetened condensed milk, milk, salt and cornstarch over medium low heat.
2. Continue stirring until thickens, then turn off heat, its time to add butter and vanilla.
3. Transfer to a bowl and cover with cling wrap to avoid skin from forming. Keep in the fridge for at least 2 hours or overnight.
4. Let’s make the dough. In a mixing bowl, combine milk, egg, condensed milk, vanilla and instant yeast.
5. Add bread flour, powdered milk and salt. Mix until dough is formed.
6. Add unsalted butter, mix until fully absorbed.
7. Knead, slap and fold until smooth, around 5 minutes.
8. Round into a ball, and place in an oiled bowl. Cover for an hour or until doubled in size.
9. Punch the air out. Divide into 12 equal pieces. To be precise, weigh the dough and divide the total weight into 12. This must be around 60 grams each dough ball.
10. Smooth and round into a ball ang place in an 11×8 inches baking dish or pan. Greased and lined with parchment paper.
11. Cover for 20 minutes. Then preheat oven at 350º or F160ºC for at least 15 minutes.
12. Brush proofed dough buns with milk. Bake for 20 minutes in a preheated oven.
13. Let it cool down completely.
14. Beat cold whipping cream with a pinch of salt until thick then add the prepared custard in three batches. Mix until incorporated.
15. Cut the top part of each bun and pipe-in the custard cream.
16. Spread custard cream evenly on top.
17. Sprinkle icing sugar and powdered milk mixture on top of buns.
18. Serve and enjoy!
