Crustless Bacon and Green Chile Quiche
Ingredients:
8 strips bacon
1/2 cup chopped hot roasted chiles
4 green onions, chopped
1 cup shredded Monterey Jack cheese (about 4 ounces)
1 cup shredded sharp cheddar cheese (about 4 ounces)
1 cup half and half
4 eggs
1/2 teaspoon salt
Cracked black pepper, to taste
Instructions:
Preheat the Oven: Preheat your oven to 400°F (385°F if using a convection oven). Spray the bottom of a quiche dish with cooking spray.
Cook the Bacon: In a large skillet, cook the bacon over medium-high heat until it’s brown and crisp. Transfer the bacon to paper towels to drain, then crumble it into small pieces.
Prepare the Dish: Sprinkle the crumbled bacon, chopped roasted chiles, and green onions over the bottom of the prepared quiche dish.
Add the Cheese: In a bowl, combine the Monterey Jack cheese and cheddar cheese. Sprinkle this cheese mixture over the bacon and veggies.
Make the Custard: In a medium bowl, beat together the half and half, eggs, salt, and pepper. Pour this custard mixture over the ingredients in the quiche dish.
Bake the Quiche: Bake the quiche for about 20 minutes in a convection oven (or 30 minutes in a standard oven), or until a knife inserted into the center comes out clean.
Let it Rest: Allow the quiche to stand for 5 minutes before cutting into wedges.
Serve: Cut the quiche into wedges and serve. Enjoy this savory, cheesy quiche with a hint of heat from the green chiles!
Notes:
Spice Level: The hot roasted chiles give the quiche a nice kick. If you prefer a milder flavor, you can substitute with mild green chiles or omit them altogether.
Bacon Options: For a leaner option, you can use turkey bacon or omit the bacon entirely and substitute with sautéed vegetables for a vegetarian version.
Cheese Variations: Feel free to experiment with different cheeses. A combination of mozzarella, pepper jack, or even cream cheese can alter the flavor and texture of the quiche.
Make Ahead: This quiche can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat slices in the microwave or oven before serving.
