Fideo With Green Chille Jalapeños, Tomatillos (Verde Sauce)
Ingredients:
10 tomatillos
3 jalapeños
3 cloves of garlic
1 onion
1 package of Fideo
Instructions:
I put about 10 tomatillos, 3 jalapeños and 3 cloves of garlic in my ninja.
Sautéed a large onion in the fat from my seared pork butt
Emptied my pan after the onions and toasted one package of fideo.
Added 1 1/4 cups water with one large tbs of roasted onion base, 1/2 of the tomatillo jalapeño sauce and sliced up a large jalapeño to cook down with the fideo! It’s delicious!
Notes:
Adjusting Spice Level: If you prefer a milder dish, reduce the number of jalapeños or remove the seeds before adding them to the sauce. For more heat, add extra jalapeños or use a spicier variety.
Roasted Onion Base: The roasted onion base adds a rich, savory flavor. If you don’t have it on hand, you can substitute with a bouillon cube or a bit of onion powder, but the roasted onion base really enhances the dish.
Fideo Noodles: Fideo noodles can be found in most Latin or Mexican grocery stores. If unavailable, you can substitute with small pasta like angel hair or vermicelli, though Fideo will give the most authentic texture.
Pork Fat: If you don’t have pork fat, you can use vegetable oil or butter for sautéing the onions, but the pork fat adds a unique flavor that complements the other ingredients.
Vegetarian Version: To make the dish vegetarian, you can omit the pork fat and substitute with olive oil or vegetable oil, and use a vegetable broth instead of water for extra flavor.
Toppings: Garnish with fresh cilantro, crumbled queso fresco, or a squeeze of lime for added freshness and flavor.
Leftovers: This dish keeps well in the fridge for a day or two. Reheat with a splash of water if needed to restore the sauce’s consistency.
