Carne con calabacitas
Ingredients:
For the Beef:
1 lb beef (chuck or sirloin, cut into bite-sized pieces)
2 tablespoons vegetable oil
1 medium onion (chopped)
2-3 cloves garlic (minced)
Salt and pepper to taste
For the Dish:
2 medium zucchini (calabacitas), sliced
1-2 tomatoes (diced)
1 cup corn kernels (fresh or frozen)
1 teaspoon cumin
1 teaspoon oregano
1/2 cup beef broth (or water)
Fresh cilantro (for garnish)
Directions:
Cook the Beef:
In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant.
Add the beef pieces, seasoning with salt and pepper. Brown the meat on all sides.
Add the Vegetables:
Once the beef is browned, add the sliced zucchini, diced tomatoes, corn, cumin, oregano, and beef broth. Stir to combine.
Simmer:
Cover and let the mixture simmer for about 20-25 minutes, or until the beef is tender and the vegetables are cooked through. Adjust seasoning as needed.
Serve:
Serve your Carne con Calabacitas hot, garnished with fresh cilantro. Enjoy with warm tortillas or rice!
