Ingredients:

1 lb shrimp (peeled and deveined)

1 tablespoon olive oil

1/2 onion (chopped)

2 cloves garlic (minced)

1-2 serrano or jalapeño peppers (chopped, optional for heat)

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheese (like Oaxaca or Monterey Jack)

Fresh cilantro (for garnish)

For the Tacos:

Corn or flour tortillas

Lime wedges (for serving)

Salsa (optional)

Directions:

Prepare the Filling:

In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and chopped peppers, cooking for another minute.

Add the shrimp to the skillet, seasoning with cumin, salt, and pepper. Cook until the shrimp are pink and opaque (about 3-5 minutes). Remove from heat and stir in the shredded cheese until melted.

Warm the Tortillas:

In a separate skillet or on the grill, warm the tortillas until soft and pliable.

Assemble the Tacos:

Fill each tortilla with the shrimp and cheese mixture. Top with fresh cilantro.

Serve:

Serve the Tacos Gobernador hot with lime wedges and salsa on the side.
