Homemade cinnamon rolls w/cream cheese frosting and nuts
ngredients:
1 cup of milk warm not hot
2 1/4 Tsp of dry active yeast
1/3 cup of unsalted butter
2 large eggs room temperature
4 1/2 cup of flour
1 tsp of salt
1/2 cup of sugar
Filling:
1/2 unsalted butter
1 cup of packed brown sugar… light or dark
2 Tbsp of cinnamon
1/2 cup of heavy whipping cream.. to pour over rising rolls
Frosting:
6 oz of cream cheese
1/3 cup of butter
2 cups of powdered sugar
1/2 Tbsp of pure vanilla not that fake stuff
Instructions:

Pour warm milk in a bowl mixer and sprinkle yeast over it. Add eggs, butter, salt, and sugar. Add flour and mix using a beater blade, just until ingredients are barely combined. Allow the mixture to sit for 5 minutes so that the flour can absorb the liquids.
Scrape the dough off the beater blade and remove the blade replacing it with a dough hook. Beat the dough on medium speed for about 5-7 minutes or until dough is elastic and smooth. The dough may be sticky but DO NOT ADD ANY MORE FLOUR . Spray a large bowl preferably glass with cooking spray, use a spatula and remove dough from mixer into glass bowl. Put a towel or wax paper over it and place somewhere warm for 30 minutes (you can turn your oven on to the lowest temperature for 2-3 minutes then turn off and place the bowl with dough inside the oven for 30 minutes) this allows the dough to rise.
While dough is rising mix together your filling ingredients in a bowl, mix very well until well combined. Once dough has sat for 30 minutes roll out you dough on a well floured pastry mat… rolling out to about a 24”/15” rectangle( do not roll to thin) Once rolled out using a spatula spread your filling onto your dough covering the entire rectangle. Roll your dough starting at the long end jelly roll style. Cut into 12 pieces and place in a greased pan *side note I press the out edges in the outer rows down a little on Each roll so that the middle portion sits higher and when baked it gives you that real cinnamon roll look*
Now cover your pan and let sit for 20 minutes, this allows the rolls to rise a smidge more. While waiting pre heat your oven to 375. After the 20 minutes warm your heavy whipping cream until it is warm NOT BOILING, and pour over your rolls, let it soak in for about 30 seconds or so and bake for 17-19 minutes until they are a nice golden brown NOT BURNT!!
Last steps… while your cinnamon rolls are baking, mix all the ingredients together for your frosting I use a fork, you can use a hand mixer. if using nuts crush up your nuts now. Once your rolls are done let them cool for about 5 minutes… (I remove mine from the baking pan and put them into another pan so that they are not sitting in the cooked whipping cream) now generously frost your rolls and sprinkle nuts on top.
