Sopita Con Albondigas
Ingredients:
For the meatballs
300 grams of ground beef
1/4 Cup of coconut flour
1 teaspoon ofdried herbs (oregano, thyme, basil)
3 tablespoons of Manchego cheese
1 pinch of salt
1 pinch of ground black pepper
For soup
Macaroni
Chicken bone broth
olive oil
chopped green chile
onion
garlic
muenster cheese
Instructions:
Mix all the ingredients in a bowl until combined, form marble-sized meatballs and set aside.
Heat the oil in a pot and brown the meatballs on all sides.
Toast/brown your macaroni in oil or butter. Toasting helps the macaroni hold up to the sauce and brings out a nice flavor in the pasta.
Today I used chicken bone broth but I often use vegetable stock.
Once pasta are brown to your liking add your broth, meatballs and bring to boil then reduce and simmer 10 minutes.
I love to add chopped green chile with a little minced onion and garlic during the last 5 minutes.
Right before serving drop in your “cheese bombs” I used cheddar today for those random delicious melted cheese treats throughout your bowl
